It is said that mozzarella was first made when cheese curds accidentally dropped into a container of hot water in a cheese factory near Naples a lot of new cheeses are often formulated when mistakes happen so who are wee to say it isn’t true.
Naples brought us mozzarella which is made from the rich milk of water buffalos. For years because of little or no refrigeration the cheese had a very short shelf-life and as a result never left the southern region of Italy where it was made. It was there best kept secret but as refrigeration developed, the secret leaked out and the world was able to taste the delights of mozzarella.
But still the best and most highly prized buffalo mozzarella is still found south of Naples near Battipaglia and Caserta, where people line up at the factory for they daily supply.
